It's just the fact that she's obsessed with everything pink and talks about it all the time. It kinda became a part of her personality. Mimi wouldn't be the same without pink, just like Magna wouldn't be the same without spam.

Ahhh I get what you mean now, yeah if the colour pink didn't exist it would definetely affect her. Now that I think of it they never changed clothes, yuck.
